Every pizza at Castello begins with a decision: do it right, or don't do it at all. We commit to the long process — slow fermentation, hand-stretched dough, and a wood-fired oven that reaches 900°F — because that is the only way to achieve a crust that is simultaneously crisp, charred, and tender inside.

About Us

A Name That Carries Weight

Castello means castle — and we built this place to stand as a landmark for honest, well-made food in Mission Viejo. Our founders brought the discipline of Neapolitan tradition to Southern California, committing to the slow process that most places skip.

Every morning, dough is portioned and set to ferment. Every evening, the oven is stoked and the toppings are arranged with the same attention they would receive in a trattoria in Naples. The result is a pizza that tastes like it was made without rushing — because it was.
